{eat lemon cake}

 Cake. Let's talk about.  I'm a cake girl.  I love it. All of it. It's gloppiness. Its stackablility.  There aren't too many cakes I've met that I don't absolutely want to smash my face directly into.  Now chill, y'all.  I'm mannerly.  I know good and well people don't be wantin' my long stringy hair up in their cakeness.  You don't have to avoid me at weddings.  I take my slice or 5 like all the rest of the happy invited guests.

I'm actually a cake maker. Fuhreal. Not like with a W-2 or bakery or anything, but it would appear that my psyche gravitates towards baking when I need clarity. When I need to heal just a little bit deeper.  When I need her just a little bit more. I love how God busts up into our person and gives those spontaneous outlets to get it all worked out.  He is one smooth mammer jammer.

The cake you see here is my own concoction.  I make up stuff all the time.  I don't use recipes or measure.My mother-in-law loves me dearly in spite of my wicked, unruly ways.  This creation isn't anything Martha Stewart. but it does make a deliciously quasi-simple dessert.  I say "quasi" because, dude, I don't know your level of baking complexity.  If you even bring up parchment paper, I get the exact same inferior fail feeling I did just before every single 6th grade math test.  So clearly, I'm "quasi" in a lot of ways.

Cake Ingredients:

  • 1 lemon cake mix

  • 1 box of instant vanilla pudding

Directions:

  • Follow cake mix directions.

  • Dump dry pudding mix into cake batter.

  • Mix well.

  • Bake as box directions state in two 9-inch GREASED circle pans.

  • When done baking remove from pans and place on flat cutting boards and place in freezer.

Icing Ingredients:

  • 1/2 bag of confectioner's sugar

  • 1 8 ounce package of cream cheese

  • 1/2 cup of granulated sugar

  • 1 large container of heavy whipping cream

Icing Directions:

  • Pour all of whipping cream into mixer.

  • Beat until peaks form.

  • Add softened cream cheese to whipped cream mixture.

  • Gradually add sugars into mixture.

  • {SOMETIMES I ADD A TEENSY TOUCH OF LEMON EXTRACT TO ICING IF I FEEL FROGGY ENOUGH.}

  • Refrigerate.

Additional Ingredient:

  • cheap lemon sandwich cookies. {like Oreos}

Cake Assembly:

  • Remove cakes from freezer.

  • Slice cake circles into 2 leaving you with 4 total pieces.

  • Dump entire container of cheap lemon cookies into ziploc bag and crush by hand.

  • Begin assembling cake in this order:

  1. cake circle slice

  2. cookie crumbles

  3. whipped icing

Do this until all 4 layers have been compiled one atop the other. Ice remaining cake with the left over icing. {I leave a few cookie crumbles out to sprinkle on top the cake.  I have also cut thin lemon slices for garnishes.}

NOTES:

  • The cake should be refrigerated.

  • The earlier you make it before serving, the more it has time to "cure up" as my husband and I like to say. All the flavors marry more. Stuff gets to settle and sit and soak. Ah yeah.

I love the memory that this particular lemon cake conjures in my mind. It was the only piece left after I had my book club over for an evening to discuss this book. I kinda think that's how cake should look.  Gone.  Shared.  Enjoyed.  Come to think of it, maybe that's why I'm drawn to make it.  It's just exactly what she is to me.  God, you are one smooth mammer jammer.  Thank you for the gloppiness and the stackability.  In cake and in life.
