{easy}

I know what you are thinking.  Easy lends itself to all sorts of shallow spaces.  Oh, you're easy are you, Meg?  Loose, too?Hmm. Easy & loose are two adjectives clearly in need direct situational settings before they are deemed wonderful.

Like when it comes to dancing?  Oh, I am a goose.  Loosey-loose now, you hear me?  No need to find a dance floor, I be creating my own space. Easy-like.  Yes, I can dance anytime.  My boys aren't always thankful of this in the grocery store aisle. Or take my boys' clothing selections.  They are completely capable of self-expression.  I don't need to micro-manage their attire.  I have a hard enough time keeping up with my own.  Let's not even discuss how lazy easy I am about washing my hair either.  But when it comes to our family's budget?  Tight as a drum, cats. BING! We gotsta bounce quarters into the mortgage jar.  Or, let's say leaving the toothpaste glops there in the sink to create insta-craters for our viewing pleasure all day?OUT.OF.BODY.  I will cold snap on you.

Recipes just so happen to fall into my happy situational setting where easy & loose are considered wonderful.  I really loathe a recipe, to be honest. I think it's because I have a wee bit too much of my Dad-daddy's genes in this department.  To this day, I can call my 84 year old grandfather and we can talk in detail about the concoction he has planned for his dinner for that particular evening.  He loves thinking outside of the box.  I do too. The idea of measuring in an exactamundo science is taxing for me.  I know in certain scenarios exact is a necessity.  Yes, I am designer and seamstress.  I get exact.  But the idea of easy and inventive are so much more appealing to my creative spirit.

These lemon cookies are one of Kenny's favorite desserts I make.  His other being this one.  I tend to lean on this cookie for gatherings when everyone brings something.  They are so quick and never fail in the delicious department.

We kinda have a thing for lemon here at our house.  I've posted before the magical ways of making this lemon cake.  There's something just so light and refreshing about this citrusy-sour fruit.

These cookies never fail  to be completely eaten and covered in compliments no matter where I serve them.  People will just ooh and ahh over their succulent lemon freshness all squishy soft bursting fresh at first bite.  And something this easy deserves to be passed around for all to enjoy.  See?  Situational settings are of utmost importance.  Cookies should be passed around.  For easiness sake.Cookies, sweet young girls.  Cookies only.

Easy Lemon Cookies

Ingredients:

  • 1 package lemon cake mix
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tub store bought lemon frosting

Directions:

  • Heat oven to 35o degrees
  • Mix cake mix, oil and eggs together.
  • Shape dough into small balls and place on cookie stone 
  • Bake 10 minutes
  • Once cookies are cooled, ice tops with lemon frosting
  • Enjoy!
